Daniel Fast Day 5

Breakfast: Fruit and Nut Parfait

Ingredients:

  • 1 cup coconut yogurt
  • 1/2 cup mixed berries
  • 1/4 cup granola
  • 2 tablespoons chopped nuts

Instructions:

  1. Layer coconut yogurt, berries, granola, and nuts in a glass or bowl.
  2. Repeat layers and serve immediately.

Lunch: Lentil and Tomato Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup lentils, rinsed
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, sautéing until soft.
  2. Add lentils, tomatoes, vegetable broth, and thyme.
  3. Simmer for 30-40 minutes until lentils are tender. Season with salt and pepper.

Dinner: Zucchini Noodles with Pesto

Ingredients:

  • 2 zucchinis, spiralized
  • 1/2 cup basil pesto
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons pine nuts

Instructions:

  1. Toss zucchini noodles with pesto until well coated.
  2. Top with cherry tomatoes and pine nuts before serving.

Snack: Apple and Almond Butter

Ingredients:

  • 1 apple, sliced
  • 2 tablespoons almond butter

Instructions:

  1. Serve apple slices with almond butter for dipping.
