Inspiration Bible Verse:

Breakfast: Avocado Toast

Ingredients:

  • 2 slices whole-grain bread
  • 1 ripe avocado
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions:

  1. Toast the bread slices.
  2. Mash the avocado and spread it on the toast.
  3. Sprinkle with red pepper flakes, salt, and pepper.

Lunch: Spinach and Quinoa Salad

Ingredients:

  • 2 cups fresh spinach
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sunflower seeds
  • 2 tablespoons balsamic vinaigrette

Instructions:

  1. In a large bowl, combine spinach, quinoa, cherry tomatoes, and sunflower seeds.
  2. Drizzle with balsamic vinaigrette and toss to combine.

Dinner: Vegetable Curry

Ingredients:

  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1 can (14 oz) coconut milk
  • 2 cups mixed vegetables (e.g., carrots, peas, bell peppers)
  • Salt to taste

Instructions:

  1. Heat coconut oil in a pan over medium heat. Add onion and garlic, sautéing until soft.
  2. Stir in curry powder, then add coconut milk and mixed vegetables.
  3. Simmer for 15-20 minutes until vegetables are tender. Season with salt.

Snack: Cucumber Slices with Guacamole

Ingredients:

  • 1 cucumber, sliced
  • 1/2 cup guacamole

Instructions:

  1. Serve cucumber slices with guacamole for dipping.
