Breakfast: Chia Seed Pudding with Berries

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1 tablespoon maple syrup
  • 1/2 cup mixed berries

Instructions:

  1. Mix chia seeds, almond milk, and maple syrup in a jar.
  2. Refrigerate overnight.
  3. Top with mixed berries before serving.

Lunch: Sweet Potato and Black Bean Tacos

Ingredients:

  • 2 sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon chili powder
  • Corn tortillas
  • Avocado slices and cilantro for topping

Instructions:

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil and chili powder.
  2. Roast for 25-30 minutes until tender.
  3. Warm tortillas and fill with sweet potatoes, black beans, avocado, and cilantro.

Dinner: Vegetable and Tofu Stir-Fry with Rice

Ingredients:

  • 1 tablespoon sesame oil
  • 1 block firm tofu, cubed
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 cup snap peas
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame seeds
  • 1 cup cooked brown rice

Instructions:

  1. Heat sesame oil in a pan over medium heat. Add tofu and cook until golden.
  2. Add broccoli, bell peppers, and snap peas, stir-frying for 5-7 minutes.
  3. Add soy sauce and sesame seeds, cooking for another 2 minutes.
  4. Serve over cooked brown rice.

Snack: Apple Slices with Almond Butter

Ingredients:

  • 1 apple, sliced
  • 2 tablespoons almond butter

Instructions:

  1. Serve apple slices with almond butter for dipping.
