Day 20 — G.R.O.W.

Inspiration Bible Verse:
Colossians 2:6–7, NIV “So then, just as you received Christ Jesus as Lord, continue to live your lives in him, rooted and built up in him, strengthened in the faith as you were taught, and overflowing with thankfulness.”

Breakfast: Banana and Almond Butter Smoothie

Ingredients:

  • 1 banana
  • 1 cup almond milk
  • 2 tablespoons almond butter
  • 1 tablespoon honey

Instructions:

  1. Blend banana, almond milk, almond butter, and honey until smooth.
  2. Pour into a glass and serve immediately.

Lunch: Quinoa and Roasted Vegetable Wrap

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup roasted vegetables (e.g., zucchini, bell peppers, carrots)
  • 1 whole-grain wrap
  • 2 tablespoons hummus

Instructions:

  1. Spread hummus on the wrap.
  2. Layer with quinoa and roasted vegetables.
  3. Roll up and slice in half before serving.

Dinner: Lentil and Spinach Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup lentils, rinsed
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, sautéing until soft.
  2. Add lentils, vegetable broth, and tomatoes. Simmer for 30 minutes.
  3. Stir in spinach and cook for another 5 minutes. Season with salt and pepper.

Snack: Mixed Berries

Ingredients:

  • 1 cup mixed berries (e.g., strawberries, blueberries, raspberries)

Instructions:

  1. Rinse and serve fresh mixed berries as a snack.
