Day 17 — Ready

Inspiration Bible Verse:
1 Peter 3:15, NKJV “But sanctify the Lord God in your hearts, and always be ready to give a defense to everyone who asks you a reason for the hope that is in you, with meekness and fear.”

Breakfast: Berry and Almond Butter Toast

Ingredients:

  • 2 slices whole-grain bread
  • 2 tablespoons almond butter
  • 1/4 cup mixed berries

Instructions:

  1. Toast the bread slices.
  2. Spread almond butter on each slice and top with mixed berries.

Lunch: Mediterranean Couscous Salad

Ingredients:

  • 1 cup cooked couscous
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine couscous, tomatoes, cucumber, and olives.
  2. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  3. Toss to combine and serve.

Dinner: Zucchini Noodles with Pesto and Cherry Tomatoes

Ingredients:

  • 2 zucchinis, spiralized
  • 1/2 cup basil pesto
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons pine nuts

Instructions:

  1. Toss zucchini noodles with pesto until well coated.
  2. Top with cherry tomatoes and pine nuts before serving.

Snack: Mixed Nuts and Dried Fruit

Ingredients:

  • 1/4 cup mixed nuts
  • 1/4 cup dried fruit

Instructions:

  1. Mix nuts and dried fruit for a quick snack.
