Inspiration Bible Verse:

Breakfast: Mango Smoothie Bowl

Ingredients:

  • 1 cup frozen mango chunks
  • 1/2 banana
  • 1/2 cup coconut milk
  • Toppings: sliced kiwi, coconut flakes, chia seeds

Instructions:

  1. Blend mango, banana, and coconut milk until smooth.
  2. Pour into a bowl and add toppings of your choice.

Lunch: Quinoa and Black Bean Salad

Ingredients:

  • 1 cup cooked quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine quinoa, black beans, corn, and cilantro.
  2. Drizzle with lime juice, season with salt and pepper, and toss to combine.

Dinner: Eggplant and Tomato Pasta

Ingredients:

  • 1 tablespoon olive oil
  • 1 eggplant, diced
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 8 oz whole-grain pasta

Instructions:

  1. Cook pasta according to package instructions.
  2. Heat olive oil in a pan, add eggplant and garlic, sautéing until soft.
  3. Add tomatoes, oregano, salt, and pepper. Simmer for 10 minutes.
  4. Toss with cooked pasta before serving.

Snack: Rice Cakes with Peanut Butter

Ingredients:

  • 2 rice cakes
  • 2 tablespoons peanut butter

Instructions:

  1. Spread peanut butter on rice cakes and serve.
