Daniel Fast Day 13

Inspiration Bible Verse:
 “Give us today our daily bread.” – Matthew 6:11

Breakfast: Berry Overnight Oats

Ingredients:

  • 1/2 cup rolled oats
  • 1/2 cup almond milk
  • 1/4 cup mixed berries
  • 1 tablespoon chia seeds
  • 1 tablespoon honey

Instructions:

  1. In a jar, combine oats, almond milk, berries, chia seeds, and honey.
  2. Stir well, cover, and refrigerate overnight.
  3. Serve chilled in the morning.

Lunch: Grilled Vegetable and Hummus Sandwich

Ingredients:

  • 2 slices whole-grain bread
  • 1/4 cup hummus
  • 1/2 cup grilled vegetables (e.g., zucchini, bell peppers, eggplant)
  • Handful of spinach leaves

Instructions:

  1. Spread hummus on both slices of bread.
  2. Layer grilled vegetables and spinach on one slice, then top with the other slice.
  3. Serve as a sandwich.

Dinner: Chickpea and Spinach Curry

Ingredients:

  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) coconut milk
  • 2 cups fresh spinach
  • Salt to taste

Instructions:

  1. Heat coconut oil in a pan over medium heat. Add onion and garlic, sautéing until soft.
  2. Stir in curry powder, chickpeas, and coconut milk. Simmer for 10 minutes.
  3. Add spinach and cook until wilted. Season with salt.

Snack: Sliced Pear with Almond Butter

Ingredients:

  • 1 pear, sliced
  • 2 tablespoons almond butter

Instructions:

  1. Serve pear slices with almond butter for dipping.
