Daniel Fast Day 12

Inspiration Bible Verse:
 “Then Jesus declared, ‘I am the bread of life. Whoever comes to me will never go hungry, and whoever believes in me will never be thirsty.'” – John 6:35

Breakfast: Oatmeal with Almonds and Raisins

Ingredients:

  • 1 cup rolled oats
  • 2 cups almond milk
  • 1/4 cup raisins
  • 1/4 cup sliced almonds
  • 1 tablespoon maple syrup

Instructions:

  1. In a pot, bring almond milk to a boil. Add oats and reduce heat to simmer.
  2. Cook for 5-7 minutes until thickened.
  3. Stir in raisins, almonds, and maple syrup before serving.

Lunch: Roasted Beet and Arugula Salad

Ingredients:

  • 2 beets, roasted and sliced
  • 2 cups arugula
  • 1/4 cup walnuts
  • 2 tablespoons balsamic vinaigrette

Instructions:

  1. In a bowl, combine roasted beets, arugula, and walnuts.
  2. Drizzle with balsamic vinaigrette and toss to combine.

Dinner: Stuffed Bell Peppers with Quinoa

Ingredients:

  • 4 bell peppers, halved and seeded
  • 1 cup cooked quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix quinoa, black beans, corn, cumin, salt, and pepper.
  3. Stuff bell pepper halves with the mixture and place in a baking dish.
  4. Bake for 25-30 minutes until peppers are tender.

Snack: Mixed Nuts

Ingredients:

  • 1/4 cup mixed nuts

Instructions:

  1. Serve mixed nuts as a quick snack.
